I believe ebooks should honor the design intent of the print book (if there is one). I don't believe that just because there are words on the screen in the correct order with bold headings, that an acceptable ebook has been created. Certainly there are design limitations and not every element from your print book will translate, but there are still little touches that can be done to make an enjoyable reading experience.
I also do not believe there is such a thing as a perfect converter to automate the change from print to electronic book. I feel too many errors are introduced by just automating the process, ultimately producing a substandard product. Considering Amazon's statistics on digital versus print sales, I think they deserve just as much TLC as their print counterparts!
Have you ever read an eBook with images that had fuzzy text? I try very hard to optimize the images for each device. Each one certainly has its own quirks!
